Blueberries are back in season, yippee! During winter time I buy frozen ones for making smoothies, but nothing beats organic blueberries fresh from the field.
And they look so pretty too, like little sprinkles of happiness! You just wanna eat them when you see them right?
I made a delicious cold oatmeal with blueberries the other day and have been re-creating it almost every morning since then. It’s so good!
I like the many different textures and flavors in it. On one side it’s fruity and moist but the topping adds a nutty-sweet crunch. Even though this makes quite a fancy breakfast dish, it is really easy and quick to prepare. Definitely a winner!
Blueberry Breakfast Bowl with Almond-Hemp Crunch
- 1 tbsp chia seeds
- 1 cup oats (I used quick rolled oats)
- 1 cup cold almond milk (unsweetened)
- 1 tbsp dried goji berries
- 1 tbsp raisins
- 1 pinch of vanilla seeds (scraped from the pod)
- 1 tsp maple syrup
- 2 tbsp slivered almonds
- 1 tbsp shelled hemp seeds
- 1 tsp maple syrup
- 1/2 cup blueberries
Stir together chia seeds, oats, goji berries, raisins, vanilla and 1 tsp of maple syrup with almond milk in a bowl. Let sit for a few minutes. Meanwhile prepare crunchy topping by roasting slivered almonds and hemp seeds in a small pan. Once the turn golden, add 1 tsp of maple syrup and let caramelize. Take from heat and let cool down just a few minutes until crunchy.
Lastly, add blueberries to the oatmeal and top with almond-hemp crunch. Enjoy!
