The winter skies have been very grey and since spring is still a while from now, I need to compensate all the grey with some happy colors. Wearing colorful clothes and nailpolish is one way to do so (yes, the weather is so bad that it only takes pink nailpolish to cheer me up! π ). But I also love to prepare colorful food. This colorful cabbage salad was quick and easy to make and it tastes very fresh and crunchy. And did I mention it’s very healthy too!
Colorful Cabbage Apple Salad
For 2 people:
- 1/4 of a small white cabbage
- 1/4 of a small red cabbage
- 1 small apple
- juice of one lemon
- 25g pine nuts
Dressing:
- 5 tbsp olive oil
- 2 tbsp white balsamico vinnegar
- 1 tsp agave syrup
- salt and pepper to taste
Finely shred the red and white cabbage and set aside in a salad bowl. Quarter the apple and cut in slices. Add the lemon juice to the apple slices so that they don’t become brown. Now mix together apple and cabbage. Prepare the dressing and drizzle it over the salad. Roast the pine nuts for a little while in a pan (without oil) and sprinkle them over the salad.
