Quick Gnocchi With Fresh Herbs

Gnocchi with fresh herbs

 

I don’t know how often I made this delicious dish already. It is so quick to make and the fresh herbs give it a feeling of summer. Since it’s not summer yet, I bought the herbs at the market but comes summer, I will try to grow my own herbs. I can’t wait to make this dish again then! Feel free to mix any kind of herbs, whatever you have at hand. Either way it will always be an explosion of tastes, this is what I love most about this dish!

Gnocchi With Fresh Herbs

For 4 persons:

  • 800g Gnocchi
  • 1 bundle of mixed fresh herbs (like oregano, parsley, thyme, basil…)
  • 4 tablespoons (plant-based) butter
  • 100 ml vegetable stock
  • salt
  • pepper
  • vegan parmesan (optional)

Cook gnocchi like explained on the package in salted water. Meanwhile chop all the herbs finely and set aside.

Heat up the plant-based butter with the vegetable stock in a big pan. Once boiling, toss the cooked gnocchi in it. Mix in the herbs and season with salt and pepper. Add some vegan parmesan cheese, if you like.
