Hello sunshine, I hope all of you are enjoying summer! After a long period of rain we are having fantastic weather here in Hamburg! It’s actually a bit too hot for me, but I won’t complain ; )
If you’re on Pinterest, you know how addictive it can be and how much fun it is! I love finding new recipes or food inspiration (check out my Pinterest boards here if you like). The other day I saw a pretty looking picture of raspberry coconut macaroons and since it looked like an easy recipe I tried it a day later. They turned out wonderfully – just as addictive as Pinterest : )ย You should really make them as well!!
Raspberry Coconut Macaroons
(adapted from Healthy Food For Living)
- 160 grams coconut fat
- 2/3 cups maple sirup
- 1 ย 1/2 cups old fashioned rolled oats
- 1 ย 3/4 cups coconut (shredded, unsweetened)
- small dash of vanilla aroma
- pinch of salt
- 250 grams raspberries (organic preferably)
Melt coconut fat and mix well with the rest of the ingredients (except the raspberries). Mash raspberries slightly and fold them in carefully. Form little balls and place them on a parchment paper lined baking sheet. Bake at 300 ยฐF / 150 ยฐC for about 20-25 minutes until they start to turn slightly golden.
Remove from the oven and let them cool down for about 30 minutes.

1 – What is coconut fat? Is it the solid stuff in canned coconut milk?
2 – For the shredded coconut, is it sweetened or unsweetened?

maybe I should have rather written coconut \”oil\” – sometimes I translate directly from my german. : ) You can buy it either in solid or liquid form in the supermarket (it\’s not the solid stuff in canned coconut milk).
As for the shredded coconut, I used the unsweetened version. I\’ll add that to the blog post! : )
