Ever since I baked my first batch of granola at home, I haven’t bought any granola from the store. First, it’s so simple to make. You can throw all kinds of ingredients together (oats, nuts, seeds, spices…), no need to measure exactly. Let your taste-buds decide! I usually take whatever I have at my hands in that moment and snack on the granola in the process to see what else is missing. All you need is a big bowl and a spoon. There are only two rules I stick to:
1. Watch the granola closely, so it doesn’t get burnt. Happened to many times in the past!
2. Adding the dried fruits and chocolate after the granola has cooled down.
Besides from being simple to make, I love the fact that you know exactly what’s in it. Especially when it comes to the sweetening. While store-bought granolas are often full with sugar, you can make a much healthier version at home and decide how much sweetener and what kind of sweetener you want to use. I like to use natural sweetener like maple sirup for example.
Lastly, homemade granola is so much cheaper than store-bought. And have I mentioned the smell that fills your home when it’s all roasting in the oven? That alone is probably worth making it!
Since the last few weeks were so busy, I have to admit, that I didn’t really watch what I was eating (too many sweets were involved, oh oh!) and apart from walking the dogs, I hardly did any exercise. Since I’m back in Switzerland I feel the strong need to get back on the healthy track. It’s great that Fritzi is here, not only because I love his company, but also because we go for hilly walks three times a day and that really feels good.
Yesterday I felt like making granola and with all that healthy motivation I decided to make a Superfood version. If you like your granola nutty, then you will love this one! It turned out sooo good! Crunchy, nutty and not overly sweet with a hint of coconut flavor. I added the chia and hemp seeds after the baking so that they don’t lose any nutritions.
Eat it for breakfast with fresh berries and cold plant milk and you’ll have a great start of the day, I promise.
Superfood Granola
Mix before baking:
- 1 cup rolled oats
- 3 tbsp sunflower seeds
- 1/4 cup walnuts (chopped)
- 1/4 cup hazel nuts (halved)
- 4 tbsp buckwheat seeds
- 1 tbsp poppy seeds
- 1/4 cup pumpkin seeds
- 1/4 cup coconut oil (melted)
- 3 tbsp maple sirup
Add after baking:
- 1/2 cup hemp seeds
- 3 tbsp chia seeds
- 1/4 cup goji berries
- 5 dates (pitted and sliced)
Preheat oven to 150 °C/300 °F. Mix all the ingredients (except the ones under “Add after baking”) in a big bowl and spread evenly on a baking sheet layered baking rack. Bake granola for 20 minutes and stir every 5-10 minutes, so it doesn’t get burnt.
Once the granola is cooled down, add the rest of the ingredients and fill in a glass jar.
