Here in Switzerland the weather is getting colder and colder. Now is the time to snuggle up on the couch with a bowl of comfort food. If you feel the same, I have the perfect recipe for you! Inspired by this recipe of Milk Free Mom I made my own adapted version and everybody loves it. I already cooked it many times and always add different veggies. It’s perfect for free-styling ; )
Sweet Potato Chili With Quinoa (Vegan)
- 2-3 tbsp olive oil
- 2 onions, chopped
- 4 garlic, finely minced
- 1 tbsp cumin
- 1 tsp chilli powder (or to your liking)
- 1/2 tsp chilli flakes (or to your liking)
- 1 1/2 tbsp tomato paste
- 650g sweet potatoes (about 3 medium sized)
- 4 small potatoes
- 500 ml vegetable stock
- 1 can of beans
- 1 big tomato
- 1 cup quinoa
- salt
- 1/2 bunch parsley to garnish
Heat olive oil in a pot and add onions and garlic. After 1-2 minutes add cumin, chili powder, chili flakes and tomato paste. Cut sweet potatoes and potatoes and add them to the pot, together with the rest of the ingredients (leave parsley for garnish). Cook for about 20-30 minutes until quinoa is cooked and potatoes are soft. Add salt to your liking, garnish with parsley and serve while still hot.
