Yesterday I’ve spent a good amount of time in the kitchen, all because I had a vision of a pizza that I wanted to put in realization. 😀 The pizza turned out the way I dreamt it to be and I will tell you all about it next week. For now I wanted to share one part of the pizza topping, which was a delicious roasted hazelnut kale pesto!
Since it doesn’t necessarily need to go on pizza but would taste delicious with pasta and many other things, I thought this needs to become a separate recipe.
I love the idea of adding hazelnuts to pesto. While pine nuts are the standard in pestos (and no doubt it tastes so good!), I like experimenting with other flavors. Especially since it’s really hard to mess up a pesto! And I must say, this kale hazelnut combination might just become a favorite of mine. It’s delicious!!

Roasted Hazelnut Kale Pesto
(for 4 medium portions)
- 50g hazelnuts
- 50g kale
- 1/3 cup olive oil
- 1/4 tsp salt
- 1 clove of garlic (about 3 g)
- 2 tbsp nutritional yeast
- 4 sun-dried tomatoes in oil
Roast hazelnuts in a pan. If possible, take of the skins, which are a bit bitter. You can peel them more easily by placing the roasted nuts in a little jar and shake them. This way the skins come of by themselves. Now place all ingredients in an electric chopper and blend. Done!
