Hey Friends! I hope you’re enjoying autumn, its beautiful colors and all of the seasonal fruits and veggies that it has to offer. I took a beautiful walk a few days ago when it was sunny and afterwards I felt so relaxed and happy. Walks in nature are like meditation to me!
I also noticed that we have some new neighbors! Very cute ones ; )
Today I wanted to eat a quick snack for lunch, so I made this sandwich that didn’t only taste great but also looked fun. I’m a sucker for pink, even when it’s pink food, so I love using the tasty vegan beet root spread from Alnatura.
Our bread maker was just done with a soft whole wheat bread, so I used that as a base for the beet root spread. I grilled some smoked tofu slices in the pan and topped the bread with it. Then I added some avocado slices on top and sprinkled it with chilli salt (my favorite is this one from Jamie Oliver).
