The strawberry season is almost over – boohoo – so I made a last batch of strawberry jam. Preserving the summer for cold winter days…
The recipe I’m sharing with you today is from my friend Anna. I would have never gotten the idea to add coconut milk in strawberry jam, but thank mother earth someone else had the idea! This jam is so delicious! Fruity strawberry flavor with a hint of coconut. You should definitely try it. And hurry, the strawberry season is almost over!
Strawberry Coconut Jam
- 900 g strawberries (hulled and halved)
- 200 ml coconut milk (if the water separated from the cream, use the creamy part for more flavor)
- 500g 2:1 jam sugar
- a squeeze of lemon juice (about 1 tbs)
Heat all the ingredients in a large pot, while stirring, until boiling. Keep stirring and let the jam cook for another 3-4 minutes. Fill into clean glasses and turn them upside down for 5 minutes to sterilize.
