Today I needed something quick to make for lunch, so I whipped up a tasty avocado filling for a pita bread. I mixed together avocado, tomato, smoked tofu and a plant-based wild garlic spread (I’m sure other spreads would also work great – anything that makes it more creamy).ย Add some salt and and a dash of lemon juice and here we go pita bread. It was delicious!
