Imagine taking a long walk in a snowy forest and coming back to your warm and cozy home. Now wouldn’t it be just perfect to curl up on the couch with a hearty bowl of soup? This is the perfect soup recipe for that scenario. It is so rich in flavor and texture, simply perfect for cold winter days. I make this soup quite often and also like to variate the vegetables. Instead of potatoes, green snow peas and tomatoes you can throw in any veggies you like really. If you can, make the soup in the morning and heat it up again in the afternoon. It is one of those dishes that taste even better when the flavors get the time to mix.
Hearty Lentil Vegetable Soup (Vegan)
For 4-6 persons
- 2 tbsp oil (I used coconut oil)
- 1 onion (peeled and finely chopped)
- 3 cloves of garlic (peeled and finely chopped)
- 1 piece of ginger about 1 inch long (peeled and finely chopped)
- 1 1/2 tbsp green curry paste
- 1 tsp curry powder
- 1 liter vegetable stock
- 5 potatoes (diced)
- 1 1/2 cups lentils (I use both green and red lentils)
- 1 can coconut milk
- 3 tomatoes (diced)
- handful green snow peas (cut in halves)
- 1 bunch of coriander (chopped)
- juice of half a lime
- salt to taste
Heat oil in a large pot and add the onions. Let cook for 1-2 minutes and then add the garlic, ginger, green curry paste and curry powder. Let sit for a little while and maybe add a couple spoons of water so it doesn’t burn. Now add the vegetable stock, potatoes and lentils. Bring to boil and cook for about 15 minutes. Then add the rest of the ingredients (coconut milk, tomatoes, green snow peas, coriander, lime) and let simmer for another 15 minutes. Finally, add some salt to your taste.
