Today’s post is dedicated to all of you with a sweet tooth! I know it can be hard to resist that little sweet monster inside of you, but what if you could make friends with it by compromising on desserts that totally satisfy the monster while not being unhealthy. I promise, the monster won’t even notice!
When I saw this recipe by Free People Blog, I wanted to try it instantly. It looked so simple to make, yet creative enough to serve at a dinner with friends and it turned out to be exactly that! I adapted it just a little bit, making it a banana version, because I looove the combination of chocolate and banana. Are you with me?
If you have all the ingredients at home, I suggest you try this right now! You won’t regret it. The only down side of this recipe is the waiting time. It needs at least 4 hours to sit and become pudding-ish. But hey, in Germany we have a saying that goes like this: “Vorfreude ist die schönste Freude” – “Anticipation is half the pleasure!”
Banana Chocolate Chia Pudding (Vegan)
Serves 3 portions (as seen in picture)
- 1 1/4 cup unsweetened non-dairy milk of your choice
- 1 old banana
- 1/4 cup chia seeds
- 3 tbsp cacao powder
- Dash of salt
- 1 tablespoon organic maple syrup
For the caramelized banana:
- 1/2 banana (sliced)
- 1 tbsp maple syrup
Blend together non-dairy milk, the old banana, cacao powder, salt and maple syrup until smooth. Add chia seeds and stir with a fork for 2-3 minutes, so that the chia seeds don’t form clumps. Fill the pudding mixture in dessert jars and let sit in fridge for at least 4 hours or over night.
Before serving, prepare the caramelized banana by heating 1 tablespoon of maple syrup in a small pan while stirring. Once it’s boiling, add banana slices and keep stirring carefully so that the maple syrup doesn’t get burnt. Once the syrup becomes gooey, flip the banana slices and turn of heat. Let cool a few minutes and then top of the pudding with the banana slices. Voila!
