Today I want to share a super delicious granola recipe with you. Because it’s christmas season, I made it colorful by adding chocolate lentils. It also makes a great edible gift!
- 3 cups of oats (I took 1 cup quick cooking oats and 1 cup old fashioned oats)
- 1 cup of walnuts and pecans
- 1/4 cup coconut flakes
- 4-5 tsp cinnamon
- 4-5 tbsp brown sugar
- 1/4 cup vegetable oil
- 1/3 cup cranberries
- 1/3 cup colorful (dairy-free) chocolate lentils
Chop the nuts and mix with the rest of the dry ingredients (leave the cranberries and chocolate lentils for later). Then stir in the vegetable oil. Mix everything well and then spread the mix on a baking sheet. Cook for 15-20 min. at 180 °C/ 350 °F. Take out the granola and let cool completely. Meanwhile chop cranberries and chocolate lentils and stir them in carefully once the granola has cooled down.
