When I prepare food, often times I have one particular ingredient that I want to use and end up creating the whole meal around it. Today this ingredient were pretty purple sprouts and this fruity/hearty/delicious salad is what I ended up making with them. I love adding fruit and seeds, which gives the salad not only sweetness but also texture. Yummy!
I used one whole avocado in this salad. Half of it went into the salad in dices and the rest got mixed up in a creamy dressing.
Fruity Avocado Salad With Sprouts (Vegan)
For two persons:
- 120g mixed salad leaves (I used bull’s blood, red chard and red mustard leaves)
- ca. 10 grapes, halved
- 1/2 avocado diced
- 1/2 pear, sliced
- 2-3 tbsp sunflower seeds, roasted
- 4 tbsp radish sprouts
- 1/2 spring onion, finely sliced
Dressing:
- 1/2 avocado
- 1/4 cup olive oil
- 1/4 cup water
- 1 tsp salt
- 2 tbsp maple sirup
- juice of 1/2 lemon
- 1 tbsp white wine vinegar
Prepare the salad ingredients by washing, slicing and dicing everything and then arranging it on a big plate. Roast the sunflower seeds in a pan for a few minutes until golden brown and sprinkle over the salad. Prepare the dressing by blending all ingredients and add to the salad.
