If you need a vegan dessert recipe that is very quick to make, this one is for you. You just throw all the ingredients in the blender and it’s ready! The cream has a yoghurt-like consistency and if you want to get more fancy, you could for example layer it in a glass with granola and fruit. There are a lot of possibilities to use this raspberry cream, but it also tastes great just by itself.
For 4 desserts
- 400g silken tofu
- 200 frozen raspberries
- 1/3 tsp vanilla (or more to taste)
- 2-3 tbsp natural sweetener like rice sirup or maple sirup
Mix all ingredients in a blender and serve immediately. For decoration you could sprinkle some dried flowers (like cornflowers) on top.
