Have you ever tried eating raw kale? In Germany people traditionally eat kale cooked, which is also nice, but raw kale actually makes a great salad! I love the combination with raw red beets and sweet & crunchy apples.
Now add some roasted walnuts and a whicked good creamy dressing made of avocado and you’ll end up with the perfect winter salad!
This one is such a winner!
Kale Salad With Creamy Avocado Dressing
(Makes about 4 portions)
- ca. 180g kale
- 2 uncooked red beets
- 2 apples
- 1 cup of walnuts
For the dressing:
- 1 avocado (peeled, without stone)
- 1 clove of garlic (finely chopped)
- 3 tbsp olive oil
- 2 tbsp vinegar
- 1-2 tbsp maple sirup
- 1/2 tsp salt
- 3 tbsp water
Wash kale, take stalks of and chop up the leafs in small size. Peel red beets and cut in fine slices. Then quarter the apples and also cut into slices. Heat up walnuts in a pan (without oil) for several minutes while stirring until slightly roasted. Set aside. Mix all the ingredients for the dressing with a hand blender and then add to the salad. I did it like Jamie Oliver, just using my hands, to make it easier. 🙂 Sprinkle walnuts on top and enjoy!
