Oooooh, this banana bread was soo delicious! I’m sure it would also taste great if you add chocolate and/or walnuts but I liked this simple version so much that I didn’t miss anything in it. It’s no suprise that this recipe originaly comes from the vegan baking book “The 100 Best Vegan Baking Recipes” by Kris Holechek. This is what I mostly use for my vegan baking. Her recipes keep making me and my stomache happy! I adjusted the recipe a little to what I had at home, so here we go…
Banana Bread
(recipe adapted from Kris Holechek)
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/3 cup sunflower oil
- 1/2 cups sugar, packed
- 2 ripe bananas
- 1/3 cup rice soymilk
In a small bowl, combine flour, baking powder, baking soda, and salt. In a large bowl, combine oil and sugar. Add bananas and milk and stir to combine. Add dry ingredients and mix until just combined. Spread batter in a loaf pan (you can either grease the loaf pan before with vegetable fat or lay a piece of baking sheet in it – this is what I usually do). Bake bread for 43-48 minutes at 350 F°/175 C° until bread is golden and a toothpick comes out clean. Let cool in the pan for 30 minutes. Turn bread out of the pan and let cool on a cooling rack.
